What You’ll Need:
2 pounds of small red and white potatoes, cut in quarters
½ red pepper, diced
1 cup celery, diced
6 Scallions sliced thin on a bias
2 tbsp. Dijon Mustard
1 tbsp. Apple Cider Vinegar
¼ cup fresh parsley, minced
1 tsp Cajun Seasoning
I use McCormick Perfect Pinch with no MSG
How To Do It:
Gather all ingredients .
Add water to large pot and bring to a boil.
Add potatoes and cook for 10-15 minutes once water comes to a boil again.
Note: Potatoes are done when they are fork tender.
Remove from heat and drain.
Cut the pepper, celery and scallions and put into a large bowl.
Add warm potatoes. Mix in the Dijon, vinegar, parsley and Cajun seasoning.
Toss to combine and serve warm.
