What You’ll Need:
1 box fusili or bowtie pasta
3 Tbsp cider vinegar
½ each sliced red, green, yellow sweet peppers
or 1 small jar of roasted peppers
Handful of fresh spinach, julienne sliced
8 ounces mozzarella cut into bite sized pieces
½ pint grape tomatoes, cut in half
1 cup diced turkey pepperoni
1 small shallot, minced
½ cup sliced, Kalamata olives
1 tbsp Italian seasoning (no msg)
How To Do It:
Gather all ingredients.
Cook pasta according to package.
Drain, rinse with cold water and allow pasta to dry.
Put pasta into a large mixing bowl.
Add the rest of the ingredients.
Mix to combine.
Chill for 1 hour and serve
