What You’ll Need:
2 heads of garlic
1 can or 1 bag frozen artichokes
2-3 zucchini, cut in 1/4 inch slices
1red pepper, sliced, optional
3 Tbsp. olive oil
3 Tbsp. Italian seasoning
1 package phyllo
S&P to taste
How to Do It:
Gather all ingredients.
Heat oven to 400 degrees.
Cut the tops off the garlic, discard. Drizzle garlic with 1 Tbsp oil. Wrap in aluminum foil and bake 40 minutes.
Heat a grill pan and coat with non-stick spray. Grill the zucchini & red pepper in batches . They should be soft and slightly browned.
Lower oven according to phyllo directions.
Place phyllo on lined trays and bake accordingly.
Remove garlic from aluminum. Place in food processor with artichokes, remaining oil, and seasonings. Whirl to combine.
Spread mixture on the baked phyllo. Top with zucchini & red pepper.
Season with S&P.
Bake in oven for 4 minutes to heat through.
Notes: Serve as an appetizer or add a green salad and serve as a meal.
